Gordal Olives with tomato capsicum coriander and cumin
- Gordal olives
- Chopped red capsicum
- Chopped green capsicum
- Chopped onion
- Vine-ripened tomatoes
- Olive oil
- Fresh coriander
- Sherry vinegar
- Ground cumin
- Process all the ingredients except the olives in a food processor to a smooth paste.
- Add a little of the liquid from the olive jar and process to combine.
- Serve with the Gordal olives
TIP: The dressing can be mixed with the olives or served separately as a dip.
