Gordal Olives with Herrings


  • Gordal olives
  • Diced pickled herring
  • Orange segments and their juice
  • Chopped peeled tomatoes
  • Chopped sundried tomatoes
  • Extra-virgin olive oil
  • Julienned Spanish onion
  • Finely chopped garlic shoots
  • Finely chopped chives


  • Combine all the ingredients in a bowl and mix well, then serve.

TIP: Serve this dish as soon as it’s prepared. You could replace the herring with anchovies or smoked salmon.
