Showy Green Olives


  • Green olives
  • Olive oil
  • Soy sauce
  • Finely grated ginger
  • Finely chopped chilli
  • Finely grated lemon rind
  • Canned clams or cockles
  • Thinly sliced parsley


  • Combine the olive oil, soy sauce, ginger, chilli and lemon rind in a bowl.
  • Add the green olives and stir well.
  • Add the clams and pepper and toss gently to combine Refrigerate for at least an hour to allow the flavours to develop.
  • Scatter with parsley and serve.

TIP: Prepare the day before and keep it in the fridge, adding the parsley just before serving.
