Caribbean style Gordal Olives


  • Gordal olives
  • Rum
  • Golden syrup
  • Angostura bitters
  • Mineral water
  • Lime wedges
  • Mint sprigs


  • Whisk the rum, golden syrup and Angostura bitters in a bowl until combined.
  • Divide among tumblers, add olives, and serve with mineral water, lime wedges and mint to taste.

TIP: Choose a good-quality aged dark rum, and offer toothpicks for picking the olives from the liquid.
